Ever since the beginning of fall, pumpkin-inspired recipes have been popping up everywhere; including quite a few right here. I know, I know… four pumpkin recipes in one week is borderline pumpkin overload, but it’s Halloween tomorrow and before you know it, pumpkin will be long forgotten and it will be all about gingerbread and peppermint.
I’m not the only one… pumpkin is all over the internet! Classic dishes are being reinvented with the addition of pumpkin, there’s pumpkin chili, pumpkin hummus, pumpkin muffins, pumpkin lattes. And, of course pumpkin dessert! The list just goes on and on! Well, I’m one of those suckers who are drawn to those pumpkin recipes, not only because I absolutely love the pumpkin spice flavor, but also because it gets me in the spirit of the season. These simple pumpkin pancakes are no exception from the list of pumpkin deliciousness, and they’re even more wonderful than the classic stack of hot cakes!

Ingredients
- 1 cup water
- 2 tablespoons pumpkin purée
- 1/4 teaspoon pumpkin pie spice or cinnamon
- 1 cup pancake mix
- maple syrup for serving

Instructions
- In a large bowl, mix water, pumpkin purée and pumpkin pie spice or cinnamon. Add the pancake mix and stir just to combine- the batter should be lumpy.
- Coat griddle or large nonstick skillet with cooking spray and set it over medium-high heat. When pan is hot, add oil or cooking spray and spoon batter onto the griddle or pan, using 1/4 cup batter for each pancake.
