Sausage Balls with Almond Flour

One more weekend of March Madness.  So many of the games this year have been nail-biters but that doesn’t mean you don’t need some snacks to get you through.  These sausage balls are my favorite for breakfast but are also great for game day.  Since they’re made with almond flour, they’re low carb and gluten free, but I personally think they’re better than the traditional ones made with Bisquick.  The almond flour adds texture and they are not so doughy. No fork is required which makes them a great appetizer for game day.

Anytime you make sausage balls you want to try to use the best sausage you can find since that’s the main ingredient. The better the quality, the less grease there’s going to be. My favorite is Neese’s hot sausage but if you’re not from this area, I really like the breakfast sausage from Whole Foods.  For the Almond Flour, I use Bob’s Red Mill.  You can eliminate some of the grease by baking them on a rack in a rimmed baking sheet.  They’re best eaten while still warm, but I’ll make a batch and freeze them.  Then in the morning, I just take out a couple and heat them up.


At the time of this post my team is still in it.  Hopefully they can make it to the Final Four.  If not, I’ll drown my sorrows in all the March Madness appetizers.  We still have one more weekend of college basketball and I’ve got one more appetizer to share.

Ingredients

  • 1 lb Sausage
  • 1 egg
  • 1 cup almond flour
  • 8 ounces cheddar cheese, shredded
  • 2 teaspoons baking powder

Instructions

  1. Preheat oven to 350º. Line a rimmed baking sheet with parchment and place a wire rack inside.
  2. Combine all ingredients in a large bowl. Using your hands, mix well.
  3. Using a small ice-cream scoop, form into balls about 11/2 to 2 tablespoons in size.
  4. Bake for 18-20 minutes until slightly browned. Remove to wire rack to cool slightly.
