Healthy Shrimp Scampi with Zucchini Noodles

Ingredients

  • 1tablespoonunsalted butter
  • 1tablespoonolive oil
  • 1shallot— finely chopped
  • 4clovesgarlic— minced (about 1 1/2 tablespoons)
  • 1poundlarge shrimp— peeled and deveined with tails on (fresh or frozen and thawed)
  • 1teaspoonkosher salt
  • 1/2teaspoonred pepper flakes
  • 1/4teaspoonblack pepper
  • 1/4cuplow-sodium chicken broth— or white wine
  • Zest of 1/2 lemon
  • 1/4cupfreshly squeezed lemon juice
  • 1 1/2poundszucchini noodles— from about 4 medium zucchini
  • 1/4cupchopped fresh parsley leaves
  • 2tablespoonsfreshly grated Parmesan

Instructions

  • Heat the butter and oil in an exceedingly giant frying pan over medium-low heat. Add the shallot and cook till starting to soften, regarding three minutes. Add the garlic and cook thirty seconds.
